July Video Tip Clip: Train Like a Triathlete!

Triathletes and MMA fighters are among the world’s best-conditioned athletes. Of course, we’re just two weeks out from our Sprint and Olympic triathlons (with no MMA fights on our horizon), so let’s talk about how YOU can train like a triathlete — even if you don’t have any plans to compete!

Save Money on Gasoline!

Having just spent the past two years writing a new history book about the Ford Mustang (UNBRIDLED: The Passion, Performance & Politics Behind America’s Favorite Pony Car), the prices we’re paying at the pump are beginning to remind me of the fuel crises of 1974 and ‘79. Back in ‘74, fuel prices skyrocketed because OAPEC members declared an oil embargo against us in protest of President Nixon having aided Israel after it had been attacked by Egypt and Syria. And in ‘79, fuel jumped again when supply dwindled in the wake of the Islamic Revolution. Today, of course, is for different reasons — but you can (to an extent) make at least a little lemonade from this latest batch of lemons!

In modern day America, especially here in the mid-west, we’ve become overly dependent on our cars. This causes us to live more sedentary lives, gain weight, and (lately) spend a lot of money on fuel! So my challenge to you, is to dust off your bicycle and lace up your walking shoes! If you’re traveling just a couple of miles — take your bike. If you’re only traveling a couple of blocks — walk.

That’s it in a nutshell. You’ll save money. You’ll get fresh air and sunshine. You’ll definitely do your heart, lungs, and legs some good — and you might even lose a little weight! And if you’re traveling a longer distance… give me a call, I might need a ride! ;-)

One-Pan Steak With Avocado Butter

Ingredients

  • 1/2 medium avocado

  • 2 tablespoons unsalted butter, at room temperature

  • 1 tablespoon finely chopped chives or green onions

  • 1 lime, zested and juiced, divided

  • 3/4 teaspoon salt, divided

  • 2 8-ounce (227g) New York strip steaks, fat trimmed

  • 3/4 teaspoon pepper

  • 1 tablespoon olive oil

  • 1 pound (454g) green beans, trimmed and cut into 2-inch (5cm) lengths

  • 5–6 medium radishes, quartered (85g)

Directions

Let the steaks stand at room temperature for 30 minutes so they cook more evenly. Meanwhile, in a small bowl, combine the avocado, butter, green onions, 1 1/2 teaspoons of the lime juice, lime zest and a pinch of salt and mash until smooth. Set aside in the refrigerator.

Heat a large (12-inch/30.5cm) cast-iron pan skillet high heat and turn on kitchen hood fan or open a window. Pat the steaks dry with paper towels. When the pan is very hot (water drops will sizzle and disappear immediately when flicked into the pan), sprinkle 1/2 teaspoon of salt in the the pan. Add the steaks and cook for 1 minute; flip. Continue cooking over high heat, flipping steaks with tongs every 30 seconds or so, until the meat is well browned on both sides and an instant-read thermometer inserted horizontally into the center of a steak registers 125°F (51.7°C) for medium-rare about 4–5 minutes total. (The meat continues to cook while resting.) Transfer steaks to a plate, season with pepper, tent with foil and set aside.

Wipe out the skillet and place over medium-high heat. Add the oil and swirl to coat the bottom of the pan. Add the green beans and radishes and cook, stirring occasionally, until crisp-tender and blistered all over, about 5 minutes. Remove from the heat and add the remaining lime juice and 1/4 teaspoon salt.

Thinly slice the steak against the grain. Arrange the green beans and meat on plates and top with dollops of the avocado butter. Serve immediately.
