Wishing You a Happy & Healthy New Year

Happy New Year! Well, mostly happy anyway. Before I say anything else, I must admit that Kristin and I are sad to report that our beloved Steph Penington will no longer be training with us in 2024. We hired Steph on Valentine’s Day 2010. She was the very first trainer we ever hired to help us with our growing client load. And for nearly 14 years now, Steph has been a beautiful ray of sunshine in our lives. Don’t worry, nothing is wrong. She’s simply stretching her wings and doing her own thing. We’re so proud of her. So grateful for all the help she’s provided us. And we wish her nothing but the best in 2024 and beyond!

As we bid a very fond farewell to Steph, we’re simultaneously looking ahead to the other changes we’re expecting later in 2024. Of course, some of these challenges are exciting, others a bit worrisome, but I’m sure we’ll adapt and move forward. In my 42 (almost 43) years on this earth, God’s never let me down yet! So, we’re proceeding into this new year with a general sense of optimism and excitement. And I genuinely look forward to eventually looking back on 2024 and saying, “that was a pretty good year.”

In the meantime, may you also have an overwhelmingly positive experience in 2024. Kristin, Vicki, and I (and I’m sure Steph too) sincerely hope you’ll enjoy good health, quality time with your loved ones, and success in your professional life - or bask in the beauty of your retirement (I’ll do the same if I can ever manage a lottery win)! Until next month, make good nutritional choices, exercise more days than you don’t, tell everyone you love that you do - and we’ll hope to see you at the gym!

Protein-Packed Overnight Oats

Ingredients

  • 1/2 cup (80g) old fashioned oats (certified gluten-free if necessary)

  • 1/3 cup (80g) skim milk

  • 1/3 cup (75g) nonfat plain Greek yogurt

  • 1 tablespoon almond butter           

  • 2 teaspoons honey

  • 1/4 teaspoon apple pie spice

  • 1/2 medium (180g) apple, cored and chopped

  • 2 teaspoons chopped toasted walnuts

Directions

Combine oats, milk, yogurt, almond butter, honey, spice, and apple in a 1-cup jar, stirring until very well blended. Cover and refrigerate 8 hours or overnight.

Stir before serving and sprinkle with walnuts.
