September Video Tip Clip: Be Like Lou!

Holy Moly! I just realized our last video tip clip was released last November! These past 10 months have FLOWN BY as I published and printed UNBRIDLED (which can be purchased via the link). So without further ado, here’s the first of many upcoming monthly tip clips. Basically, we should all follow our cat’s lead. Get plenty of fresh air, sunshine, exercise, good food - and take naps!

Wow, I Got Distracted!

Welcome to September and, for those of us with school age kids, congratulations on your renewed freedom! Just over three years ago I began writing a book. For two of those three years I managed to balance that project with my responsibilities at Kennedy Fitness. Since late last fall, though, these monthly newsletters fell victim to the aggressive deadlines I was faced with to see that book through publication and into print by the time Ford’s new Mustang (the subject of the book) arrived in Dealerships. Luckily, I was successful and UNBRIDLED arrived roughly three weeks before the new car!

Now that that’s out of the way, it’s my goal to get back to making sure these little newsletters arrive by the start of each new month - just like they used to. I also need to get back to making sure my own workouts occur on a more dependable “daily” basis. Given, I’m still traveling most weekends now (on my “Unbridled Book Tour”), but there’s no reason I can’t practice what I preach and be hitting the gym Monday through Friday most weeks.

I think that’s something we can all probably relate to. Maybe not necessarily writing a book, but certainly allowing other personal and professional goals distract us from our otherwise healthy lifestyle. In any case, I expect that as I hit the gym harder and more consistently (and as I clean up my diet a bit more) I’ll feel better and be generally happier. Don’t you think you would too? Instant Pot Chickpea Tikka Masala

Ingredients

  • 1 tablespoon canola oil

  • 1 cup (124g) onion, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon garam masala

  • 1/4 teaspoon cayenne pepper

  • 2 14.5-ounce (411g) cans no-salt-added diced tomatoes, one can drained of liquid

  • 2 15-ounce (425g) cans low-sodium chickpeas, rinsed and drained

  • 1 teaspoon kosher salt

  • 1 cup (235ml) canned full-fat coconut milk

  • 3 cups (400g) hot cooked basmati rice

  • Chopped cilantro (optional)

Directions

Set Instant Pot to sauté and allow to preheat for 2 minutes. Add oil to pot and swirl gently to coat. Add onion and garlic; sauté 4 minutes. Stir in garam masala and cayenne pepper; cook until fragrant, stirring constantly, about 30 seconds.

Drain juice from one can of tomatoes; stir in both cans of tomatoes, plus the chickpeas and salt. Cover Instant Pot and fasten lid; set steam valve to sealing. Set to high pressure for 10 minutes (the pot should take 15–20 minutes to come to pressure).

When cooking is finished, quick-release the pressure by turning the steam valve to venting. Remove the lid and stir in the coconut milk. Serve the chickpea mixture over rice; garnish with cilantro, if desired.
