We’re big believers in supporting locally owned businesses.  Specific to the scope of this newsletter, we love Body Basics over at Rockbrook Village.  The staff there are experts in their field and the equipment (though I’ve always been a big Precor guy) is first rate, high quality stuff!  But some folks love the convenience of ordering anything and everything on Amazon, and so our new “Amazon Local Associate” page provides another convenient option if you want to buy the very same items our professional trainers use and recommend every day!

Convenience is everything in 2018.  Apps for your phone, tablet, TV, and even your car, have revolutionized the entire concept of convenience over the past decade.  In the past, if you wanted to search for a new car, you had to actually drive to a dealership to see what they had on their lot…now you can scroll through every dealer lot in town, and across the entire country, without ever getting out of your chair!

More pertinent to the scope of our newsletter, if you were going to track your nutrition, you used to have to buy a book filled with nutrition facts for anything that didn’t come with a nutrition label (e.g. fresh fruit, vegetables, etc…), and you needed an actual pen, paper and a calculator to figure it out and write it all down…now just one free app, like MyFitnessPal, can do all that!  And when you needed to buy anything from groceries to fitness equipment, you had to drive across town to whichever store.  Now you can order your groceries on-line and have them delivered to your door, and as detailed above, you can use our Amazon Local Associates page to order all the exact fitness equipment we recommend, and have it delivered to your home, with a tap of your finger!

Technology can’t do everything though.  On-line training is a perfect example.  Apps may offer high quality video tutorials, explaining and demonstrating how to properly perform various exercises (as will our own such feature, coming soon to our network of websites), but they can’t correct you if you’re doing something wrong.  An app can’t pull a weight off your chest if you’ve attempted one too many bench presses…and an app can’t shake your hand, pat you on the back, or even give you a hug on days when that might just be all you really need!

Technology is wonderful.  People are better.  Embrace both!

Shiitake & Asparagus Saute w/Poached Eggs


  • 2 tablespoons olive oil
  • 1/3 cup thinly sliced shallots
  • 1 tablespoon chopped fresh thyme
  • 2 cups sliced shiitake mushroom caps (about 6 oz.)
  • 5 ounces trimmed fresh asparagus
  • 3 garlic cloves, thinly sliced
  • 1/2 cup unsalted chicken stock (such as Swanson)
  • 2 teaspoons unsalted butter
  • 2 teaspoons fresh lemon juice
  • 3/8 teaspoon kosher salt
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon white vinegar
  • 2 large eggs (in shells)

How to Make It

Step 1

Heat oil in a large skillet over medium-high. Add shallots, thyme, and mushrooms; cook 4 minutes or until lightly browned. Add asparagus and garlic; cook 2 minutes. Add stock; cook 2 to 3 minutes or until liquid has reduced to about 2 tablespoons. Remove pan from heat; stir in butter, lemon juice, salt, and 1/4 teaspoon pepper.

Step 2

Fill a skillet two-thirds full with water. Add vinegar; bring to a simmer. Break each whole egg into a custard cup, and pour each gently into pan; cook 3 minutes or until desired degree of doneness. Carefully remove eggs using a slotted spoon.

Step 3

Divide mushroom and asparagus mixture evenly between 2 plates. Top each serving with 1 egg. Sprinkle remaining 1/4 teaspoon pepper over eggs.
