Best of Omaha

I don’t like to lose.  Who does?  Probably nobody!  I’m generally optimistic, but I’m also a realist.  I don’t have the genetics or the God-given natural talents and abilities to be a professional athlete, so when I compete in any sort of physical contest (e.g. natural bodybuilding, marathon, etc…) I usually consider that I’m competing against myself.  How about you?  Do you consider yourself a competitive person?  Do you compete in a sport, in business…or maybe with a sibling or a neighbor?  

Years ago when I was working as a mechanic for Porsche, Ford Racing offered me a job.  Had I accepted, I’d have found myself turning wrenches on their off-road racing trucks at the Baja 1000 in Mexico.  I’d also have found myself in far over my head, so I turned down the opportunity.  More recently (but still several years ago) my wife and I made an effort to win Omaha Magazine’s “Best of Omaha” contest.  At the time we just didn’t have enough clients to lock in as many votes as was needed to be competitive.  

Since then, I’m pleased to say that Kennedy Fitness has grown considerably.  We believe that between the firms, banks, airlines, security companies and restaurants that make up our current batch of corporate clients…and the doctors, CEO’s, directors, investment advisers, realtors, stay-at-home spouses, retirees, and teenagers that make up our personal training clientele…we should be able to put up much more competitive numbers this year.  And so we humbly ask that you PLEASE VOTE FOR US, and that you PLEASE PASS ALONG OUR NAME to your friends, family and co-workers so that they might vote for us in the contest too!

Chocolate Peanut Butter Protein Oatmeal Cups


  • 2 tablespoons chia seeds, plus 6 tablespoons water
  • 3 medium-to-large ripe bananas, mashed
  • 1 cup unsweetened cashew milk (almond or coconut milk work, too)
  • 1/4 cup creamy peanut butter
  • 1/4 cup pure maple syrup (optional, may substitute with stevia or other sweeteners)
  • 1/2 teaspoon vanilla extract
  • 1 scoop chocolate plant-based protein powder
  • 3 cups old-fashioned oats 
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon baking powder
  • Pinch of salt


Preheat oven to 350°F. Spray muffin tin with cooking spray.

In a small bowl, stir together chia seeds and water to make “chia eggs.” Alternatively, you could use 2 large eggs. Set aside.

Place bananas in a large bowl and mash with fork. Add cashew milk, peanut butter, optional maple syrup or stevia and vanilla and stir until well mixed. Stir in chia eggs.

Add protein powder, oats, cocoa powder, baking powder and salt. Stir to combine.

Spoon mixture evenly into muffin tin, filling tins to the top. You may have some leftover batter. Bake for 25 minutes.

Remove from oven and cool in pan on a wire rack. Come, remove from pan and store in an airtight container in the refrigerator.
