2018 and Beyond

Looking back at December newsletters from the past, I noticed a trend.  I’ve often decided to speak to you about the importance of not over-indulging through the remainder of the holiday season (you still shouldn’t), how much we appreciate each and every one of our trainers and clients (we really do), or the rush of folks that would soon be stampeding into your local gym (they are coming).  But I don’t want to focus on any of that this year!  This year I want us to look forward.

Do you want to end 2018 at the same weight, and in the same shape that you’re in now?  If your answer is “No.” you need to change something in your daily routine.  Ask yourself;  “Are my work and family schedules going to change to accommodate my goals?”  If not, what can you do?  If you can’t commit to spending more time at the gym before or after work…then I suggest you commit to working out AT work!  If we’re already servicing group exercise classes at your place of business, and you’re not attending, COME JOIN US!  And if we’re not servicing classes at your business, please go talk to your HR department (or better yet, your CEO) about improving your company’s Employee Wellness Program for 2018 and beyond!

We are uniquely prepared to service a wide variety of classes such as Yoga, Pilates, bootcamp, kickboxing, cycling, suspension training and even our original “Undesk Your Body.”  We’ll build a website designed specifically for your company, to provide you and your co-workers the ability to reserve your spots in these classes.  We’ll even provide all the liability waivers and other health/legal related paperwork that your employer might need, all without them having to lift a finger! 

Don’t get me wrong, we’d LOVE to work with you before or after you get off work.  One-on-one personal training has been our specialty for more than a decade now, but only 2.5% of Americans work with a trainer…while nearly 60% of Americans have jobs!  We appreciate each and every one of our clients, but we want to change as many lives as we can, and by implementing your new workplace wellness program, we can help you…and every single one of your co-workers at the same time!

Mushroom Stroganoff

Servings: 4 • Serving Size: 1 1/2 cups • Points+: 7 pts • Smart Points: 9

Sodium: 312 (without salt)


  • 1 tablespoon butter
  • 1/2 cup chopped onion
  • 2 tbsp unbleached all-purpose flour
  • 2 cups fat-free, less-sodium vegetable broth (or beef if you’re a carnivore)
  • 1 tbsp Worcestershire sauce
  • 1 tsp tomato paste
  • 5 oz sliced Cremini mushrooms
  • 8 oz sliced baby Bella mushrooms
  • 3.5 oz Shiitake mushrooms
  • 1/4 tsp thyme
  • salt and pepper to taste
  • 2 tbsp white wine or sherry
  • 1/4 cup reduced-fat sour cream
  • 8 oz uncooked noodles (No-Yolk noodles)
  • 1 tbsp minced fresh flat-leaf parsley for garnish


Cook noodles in a pot of salted water according to package directions, I like to under-cook them a bit so I can mix it with the sauce and let it finish cooking.

Meanwhile, while the water starts to boil for the noodles, heat a large nonstick skillet over medium-high heat. Melt butter over medium heat and add onions to the pan. Cook 2 – 3 minutes over medium-low heat.

Add flour; stir with a wooden spoon for 30 seconds. Gradually add broth, Worcestershire sauce, and tomato paste, stirring constantly. Add mushrooms, thyme, salt and pepper; stir and cook 4-5 minutes or until thickened and bubbly, stirring constantly.
